Carolina BBQ Salad
This is a quick, easy, well-loved and filling recipe around here. It’s also very filling, – a nice bridge between old-american cuisine and the new healthier variety. I believe in building bridges between old and new!
Carolina BBQ Salad
While carolina barbecue typically does NOT include traditional barbecue sauce, the salad dressing in this recipe is similar to the sauce that most pulled bbq is served with in Carolina. Throw it together in minutes and enjoy!
Ingredients – Salad
- Rotisserie Chicken (or other protein source that you like with bbq sauce)
- Greens (your choice, spinach, kale, chard, romaine, green leaf lettuce etc)
- Honey BBQ sauce (the bbq sauce is not essential if you aren’t a fan)
- Celery
- Red Bell Pepper
- Apple
- Cheddar Cheese (optional)
Dressing
- 2 parts or 1c. Olive Oil
- 3 parts or 1.5c. Apple Cider Vinegar (love Brag!)
- 1 part or .5c. Honey (also could use agave, sugar, etc)
Tools
Knife, cutting board OR my favorite – MANDOLIN (pictured below and ideal for fast slicing!)
Directions
- Pull chicken off bone (this can be done ahead of time and refrigerated)
- mix with barbecue sauce in separate bowl
- slice veg and fruit
- toss all produce with greens and dressing
- top with barbecue pull chicken
