Carolina BBQ Salad

While carolina barbecue typically does NOT include traditional barbecue sauce, the salad dressing in this recipe is similar to the sauce that most pulled bbq is served with in Carolina.  Throw it together in minutes and enjoy!

Ingredients – Salad

1. Rotisserie Chicken (or other protein source that you like with bbq sauce)
2. Greens (your choice, spinach, kale, chard, romaine, green leaf lettuce etc)
3. Honey BBQ sauce (the bbq sauce is not essential if you aren’t a fan)
4. Celery
5. Red Bell Pepper
6. Apple
7. Cheddar Cheese (optional)

Dressing

1. 2 parts or      1c.   Olive Oil
2. 3 parts or  1.5c.   Apple Cider Vinegar (love Brag!)
3. 1 part   or    .5c.   Honey (also could use agave, sugar, etc)

Tools

Knife, cutting board OR my favorite – MANDOLIN (pictured below and ideal for fast slicing!)

Directions

• Pull chicken off bone (this can be done ahead of time and refrigerated)
• mix with barbecue sauce in separate bowl
• slice veg and fruit
• toss all produce with greens and dressing
• top with barbecue pull chicken

I’ve been itching to share pictures and words with you.  I’ve been buried in the battle.  Not many words today, but gifts…oh so many gifts – gifts in birthdays, in painted little faces, in digging in the dirt in Sunday dresses, in the grass blades peaking through the snow, in sunlight and shadows – gifts a plenty!

Between the battle lines and in the juggled mess, I try to slow – to be still – to know that He is God.  In the stillness there is much to see, no matter the mess, no matter battle!
